After chatting with Emilie and reading her tips, we all agreed that using a ravioli mold may seem daunting at first, but that it’s actually rather simple and results in an impressive-looking pasta. I like the pasta to have a bite to it and remain 'al dente'. Rolling the dough too thin results in the filling breaking the tender layer of the dough.

The double-cutter wheel is the most essential tool, but a pasta machine makes it a lot easier to roll out thin sheets of pasta, the basis of your ravioli dish. Use a rolling pin to achieve the same results, but it’ll take a bit more work. A few ravioli stamps. I recommend getting them shaped with circles, ovals and hearts! While you can always make squares with the roller, using stamps for less square shapes is the way to go.

So.. what is the best ravioli maker?

With an abundance of different methods making ravioli, it might be difficult to choose the essential pasta tools and gear. Please remember that pasta is supposed to be simple and a fancy machine doesn’t automatically make for better ravioli or pasta in general. Starting out when making ravioli, getting a few ravioli stamps, a roller (and why not add the tray while you’re at it) is probably the way to go. The tools to make ravioli by hand – do you really need anything else? The half batch isn’t as time consuming and still makes a good amount of ravioli, so if this is your first time making ravioli, start with the half batch of ravioli dough. Cut your pasta sheets into squares just bigger than the size of the mold. Having some overhang is ideal because it will ensure that your ravioli fill the entire space of the mold. Ravioli Attachments- there are two types of ravioli maker attachments: those for manual pasta makers and those for electric pasta makers. These devices are usually more expensive and are designed for processing large batches. Best for home cooks with more experience and for those who plan on making them frequently.
