I wish I could say this recipe worked and it was great, like all the other things I’ve tried in this book so far this month. Cooking a homemade meal is the single most important thing we can do for our well-being, because then we know exactly what is going into our bodies. I wish I could be as quick as the estimate to make this (it took about double the time), but I do think it looks lovely, so perhaps the extra time was worth it. Not surprisingly, making spaghetti out of courgettes did take some time, but I think it was time well spent, given how healthy courgetti is, especially when compared to the usual spaghetti. There are also charts for grain bowls, stir-fries, baked potatoes (both sweet and regular), easy things to throw together using different veggies you have on hand, and one-pan dinners.

The bread, which I had to cook individually, got better each time as I got more skilled at figuring out what was needed. I love the book with the recipes that are full of "normal" ingredients, specially if they have the pictures of (almost) all the dishes in the end. Looking at this picture reminds me again why I loved this salad: Isn’t just a gorgeous collection of colourful virtuousness? but I figured the recipe said to bake them for 25 to 30 minutes, so I figured it would firm up later.Guiding you through the year, from the coldest winter days to the long light summer evenings, The Modern Cook’s Year is set to become a contemporary classic. To be honest, when I first glanced through this cook book I didn't think I'd like it - the pictures were just so over-the-top glossy, screaming "unattainable lifestyle that you should envy rather than learn from. This book is filled with vegetarian and vegan recipes and many of them are organized by how long it takes to cook. I really want to eat just about everything in this book, and not only that, but I actually feel inspired to make them for myself!The final product almost always turned out well but it was frustrating to have to try so hard to understand the instructions.

This book is packed full of endless options and delicious recipes, and is a great reference to have in every kitchen. This London-based author, together with publishers Ten Speed Press, have tailored this book to the American audience. We ended up eating the brownies that were on the sides, as the middle bit was just a pool of chocolate-raspberry-pistachio liquid.

It’s the quick-to-make, everyday, and weeknight meals that we eat on, say, Tuesdays and Wednesdays that make a real difference in our lives. While the dishes are all vegetarian, it's comforting to know that "modern" cooking can still include desserts like cookie dough bars and panna cotta.

And my husband is light-years from being a vegetarian, so he will provide a perfect test subject for the recipes of this book. Making vegetables the focus of our diet is widely considered to be the single most important thing we can do for our own health and for the health of the planet. The more I cook simply—easy pastas, quick hearty salads, and all-in-one gratins—the more I realize that food doesn’t need to be posh, complicated, or made from exotic ingredients to do us good. Overall it feels as though it has been put together too quickly and the recipes simply aren't as dependable as they should be.
