During one of my chemo sessions, a refreshments trolley was wheeled in. It looked like something out of a 1960s Carry On film, except what was on it wasn’t remotely funny. Added Campbell, “Good nutrition is medicine, and with the help of many leading scientists, significantly funded by the government, Superloaf has been specifically designed to be the first processed staple food with this as its core purpose. We want Superloaf to take a lead in food systems becoming the solution, rather than the problem. Shortly after that we made a commitment to do everything in our powers to change these foods for the better, starting with bread. We then founded Modern Baker, which produces SUPERLOAF, and later, Oxford Food Tech for all our science and IP. With 'diabestity' joining climate change as one of humanity’s greatest challenges, the arrival of the loaf opens a brand new approach to the chronic nutrition problem across the globe – increasingly linked to the explosion of ultra-processed foods (UPFs), which now represent over 50% of the UK’s calorie intake.

Modern Baker’s new bread is the result of “tens of thousands of hours, sleepless nights and millions of cul-de-sacs and, gratifyingly, some fantastic breakthroughs” Campbell says. This free-to-attend webinar is one not to be missed and take places on Thursday, 28 September 2022 at 3:00 BST/4pm CET/9am CT. If you can’t make the live event, register anyway. The webinar will be made available to registrants after the broadcast date as an on-demand presentation. Category winners were then pitted against each other as the judges decided on the entry to be named Britain’s Best Loaf (see the full list of category winners below). But Superloaf also includes soluble fibre to help slow down glucose absorption in the small intestine, and fermentable fibre to provide a good environment for the friendly bugs in the large intestine. At the end of 2022 Silicon Valley started to break down the Food Tech investment asset class into its component parts. ‘Food-as-med’ was one of them, recognising the commercial potency in science and tech based solutions aimed at solving the chronic metabolic health crisis facing society.”

And finally, a more personal question! What’s your daily routine and the rules you’re living by at the moment?

A preference for bread produced from wheat that has been grown and milled as locally as possible to the point of serving.

The Great Britian Nutrition and Health Claims Register includes none specific to sourdough fermentation, meaning it’s not legal to make a nutrition or health claim that isn't on the register. Harvested from a plant that belongs to the plantain family, this is known as one of the most effective fibres for maintaining digestive health because its gel-forming properties slow down glucose absorption, helping in elimination. Following its annual Sourdough September campaign, the Real Bread Campaign noted a rise in claims within the sourdough community. Oxford supplier Modern Baker has unveiled what is claims is the world’s first ‘smart loaf’ – a hi-tech bread that supports normal immune function while providing fewer calories than traditional bread.Receiving our sixth grant in a row from Innovate UK is tremendously encouraging, and a brilliant validation of Alt-Nutrition staples that benefit digestive and gut health, potentially ushering in a new era of mass-produced foods that are nutritious and have a net positive impact on wellbeing and the planet. Of the ~1B loaves of bread produced globally every day, over 70% constitute an Ultra-Processed Food, a major contributor to the global epidemic of diet-related chronic illness, an ongoing crisis that’s crippling global healthcare systems to the tune of trillions, while blighting lives and communities. There is another way. UPFs have exploded on the market in recent years with unhealthy items said to now represent nearly 60% of the UK’s calorie intake, Modern Baker noted. They are increasingly linked to the chronic nutrition problem across the globe, something Modern Baker is keen to reframe with its health-positive formulations.

Superloaf 5.0 has been developed entirely starting with human biology at cellular level and that is the lens through which the product has been designed,” he said.Superloaf is the world’s first ‘smart loaf’, claims Modern Baker co-founder Leo Campbell. It is meant as a healthier alternative to standard wrapped bread. “Superloaf is the first real step in our mission to democratise healthy baking, for the common good,” he says. “Industrial bread is the UK’s most eaten ultra-processed food. Superloaf represents a massive step away from this.” Modern Baker takes a “health-plus” approach, Campbell noted, meaning its development is more about the ingredients added in and what benefits they offer as opposed to a “health-minus” approach of taking ingredients out. As such, Campbell explained the business had to “step out of the HFSS, traffic light and Eat Well plate structure because it doesn’t savour better nutrition”. Sourdough is the beating heart of the artisan bread revolution, and US-based Sourhouse is on a mission to make sure more people can participate.

The company forged a partnership with M&S in 2022 following media coverage of the beta-version of Superloaf.

No single ingredient will support immunity on its own; it’s the interaction of a range of different ingredients that helps protect the body against disease. Here are some highlights of Superloaf’s 16 natural ingredients: Dubbed “the healthiest loaf ever made” and geared towards supporting immune health, the NPD went on to win the Innovation category at Britain’s Best Loaf just a few months later. Now, though, some of Britain’s top scientists have created a ground-breaking, mass-produced, sliced “Superloaf” that they claim can actually help support the immune system. The vision came following a cofounder’s epiphany in a chemo ward, so uniquely, it takes cellular-level human biology as its starting point. Modern Baker collects data and stores it.
