If you are a fan of japanese whisky you may have already heard of the mysterious Togouchi, a blend from Japan available in 12 and 18 year old, and there isn't much more information about it. But why is it a naturalized whisky?

Japan has been firmly established as a whisky producing nation for many decades and, with new distilleries cropping up all over the world, it is now seen as one of the old guard. Grain, vanilla, spirit, honey, apple, and a bit of spice. It’s flat and uninteresting, but at least it’s not completely offensive. Since a decade, japanese whisky is booming with the rise of its two most famous brands: Suntory and Nikka, but also Ichiro's Malt and many others. The know-how build up over centuries by the japanese including the production of shochu alcohol distillation, pushed some traditional fine spirits producers to engage in parallel in the distillation of malted barley or grain and therefore in the production of whisky occasionally to Hombo Shuzo / March for example, or continuously for White Oak and its famous single malt Akashi. Whatever mysterious magic this sea adventure conjures up seems to work a treat in their lightly peated whisky, where delicate, sweet vanilla and soft smoke merge with zesty citrus flavours and a honeyed sweetness. There are also fresh touches of berries and a dry oak that seems to catch the flow of the smoke like incense and drift with a dusty dryness that lingers for an age. Togouchi Blended Japanese whisky is know as the “naturalized Japanese Whisky” because they import already distilled single malt whisky from Scotland and grain whisky from Canada. They then go through an undisclosed process to “naturalize” the whisky so that it can be called Japanese Whisky. Then they make their blends. At this price, we’ve been unable to afford a bottle, so we’ll rely on tasting notes from The Whisky Exchange instead, who have the honour of selling the whisky, bottled by Elixir Distilleries, and with the beautiful label artwork produced by their creative director, Raj Chavda. On the nose they describe “Rich dried fruit, sweet leather and mushroomy earthiness”, with a palate of, among other things, “chocolate-covered liquorice… spicy leaves… cinnamon heat… pineapple, mango, apple and pear… hints of tar… and brown sugar sweetness.”

Akashi is made at Eigashima Distillery, founded in 1888, and is owned by one of the country’s oldest sake producers. Togouchi is made at Sakurao Brewery & Distillery, a small distillery in Hatsukaichi, southern Japan.
